How to make Kaiserschmarrn - an austrian pancake - German Recipes - klaskitchen.com - simple recipes - Ein traditionelles Gericht aus Österreich setzt sich zusammen aus einer Mischung aus Eiern, Mehl, Milch und Zucker. Here´s what you need for the Kaiserschmarrn: 100 g raisins (3.5 oz) 5 tbsp Rum cognac or water 6 tbsp 1 tsp vanilla 3 tbsp sugar 1 pinch of salt 250 g / 9 oz flour 500 ml / 2 cups of milk 50 g / 1.8 oz butter also Butter for baking 4 tbsp powdered sugar for dusting preparation Depending on your taste, place the raisins in 5 tbsp rum, cognac or water for at least half an hour. Separate the eggs. Beat the egg white to stiff snow. Beat the egg yolk, vanilla sugar, 1 tablespoon sugar and the salt with the hand mixer until frothy. Gradually stir in a spoonful of flour and a good dash of milk until all is used up. Melt the butter and stir. Carefully lift the egg whites under the dough so that no more protein flakes are visible. Finally, stir in the raisins without the soaking liquid. Heat the butter in a pan and pour the dough about 1 cm high. Reduce the heat slightly and let the dough bake until golden. Check it out again and again. Quarter the mixture, turn it over and bake again until the mass is almost squashed. Divide the Kaiserschmarrn into bite-sized pieces, sprinkle with 1 tablespoon of sugar and caramelise briefly. Keep warm and process the remaining dough, or better use 2 pans directly. Arrange the Kaiserschmarrn on plates and dust with powdered sugar. Serve with apple compote. Possibly.
